Chablis Wines

Chablis wine is usually a distinctive dry white wine made from grapes grown in the Chablis region of France. This area is the furthest northern region of Burgundy. There is no definitive date for when grapes arrived in this area of France. However, by the medieval period, there are records of wine coming out of this region to parts of England and Flanders. However, by the middle of the 16th century, war and disease had made its way to this area. The wine culture did not fully recuperate until after World War II.

The climate of this area of France has very hot summers and long winters. The quality of the grapes can vary depending on how long the winters last. The distinct flavours of Chablis wine comes when the conditions are just right. Too much rain and not enough heat create high acidity. Too much heat can reduce the acidity too much. The Chardonnay grapes that make up Chablis wine have a taste that resembles that of a green apple. Some vintages have a steely note while others can have an earthier flavour. As it ages, many gain delicate honey notes.

Unlike many other wines, many Chablis wine vintages mature in stainless steel vats instead of oak barrels. However, many winemakers choose to put the Chablis in oak barrels for at least part of the time. Those winemakers have a reputation for getting the Grand Cru and the Premier Cru appellations. For those that like crisp white wine, the Chablis is a perfect choice.
