Mozartkugel, which means Mozart ball, was invented by Paul Furst in 1890. It was named after the famous Wolfgang Amadeus Mozart thus making it originally known as the “Mozartbonbon.” It was created for the 100th anniversary of his birth.
Paul started forming small balls of green pistachio marzipan covered with praline cream and pierced on little sticks made of wood. The balls were then soaked in warm and lustrous chocolates until they were all over wrapped regularly with layer of chocolate. His chocolates were unique in the fact that they were perfectly rounded without any flat areas.
Mozartkugel are exclusively sold in Paul’s four shops in Salzburg. Then it progressed to being sold as well on his company’s website. The marzipan chocolates can be bought as packages in several pieces or individually. He did not allow it to be sold in other shops. Paul’s special chocolate was presented in a Paris fair in 1905 in which a gold medal was awarded to it. To this day, Paul’s chocolates are still produced manually without any industrial equipment and with the same original recipe. According to his company, it is annual producing an average of 1.4 million Mozartkulgen by hand.
However, since there has been no trademark for these Mozart inspired marzipans, there have been numerous products or brands imitating the chocolates. The imitations are made with almost all of the same ingredients Paul used but produced with the aid of industrial techniques. Other famous producers of these chocolates are Engljahriner and Petrik. Both confectioners use the same recipe and the same method for their respective marzipan chocolates. Over time, makers of these chocolates using industrial techniques perforated and scattered all over the world. This allowed for everyone to have a “glimpse” of the original Paul Furst Mozartkugel.
And since the original ones are only available in Salzburg, the world can content itself with other brands offering comparable delectable Mozart inspired chocolates. Serenata is always there to give its own brand offerings.
