Prolonging the life of your cut flowers begins the moment they're entrusted to your care. First off, make sure your vase is very clean and filled with fresh, lukewarm water mixed with flower nutrients. Next, strip off all leaves that will be below the water level of the vase and cut 2cm off all stems at a slight angle. Place the flowers in the vase, away from direct sunlight, radiators, draughts and fruit. Over the following days, be sure to remove any faded flowers and top up the water regularly.

I love proper Pouilly-Fumé but too much Pouilly-Fumé tastes like it could come from anywhere, often as a result of high yields or hurried commercial winemaking, but the pure Sauvignon Blanc the Sagets harvest from their white, marl-rich soils has that tell-tale whiff of gunsmoke and subtle fruit on the nose that we always look for. Minerally, with excellent racy acidity. A delicious match for freshwater fish and especially shellfish (mussels, oysters).

Producer: Based just south-west of Sancerre itself in the charming village of Bué, this really is wine country proper, with vines as far as the eye can see, and Balland-Chapuis’ extend over some 35 hectares here, across the river in Pouilly-Fumé and into the Coteaux du Giennois further north. The Saget family of father Jean-Louis and sons Arnaud and Laurent are well established in Pouilly-sur-Loire, with winemaking history going back eight generations, and expanded across the river back in 1998. We were very pleasantly surprised by this estate, and are convinced that you will be too.
