The rather special 1er Cru Montmains is given a little time in a combination of new and old oak just to allow the extra layers and complexity to develop. Stocks of this wine are limited but I would recommend anyone who hasn’t tried a Chablis for a while, let alone a decent one, to buy a case of this wine – it will make a believer out of you again.

Producer: It took a while to find the village of Montallery but the outstanding Chablis that we tasted at the cellars of Claude and Jean-Louis Chevallier were more than worth the journey. One glance at their immaculate cellars and it became clear that the brothers were fastidious about cleanliness and extremely serious about Chablis.
